Frozen Yogurt Bark

I was lazily scrolling through social media this holiday weekend when I came across someone making some frozen yogurt bark, which looked incredibly delicious & easy to make! This was not the first time I had seen someone making frozen yogurt bark, but this time I decided I wanted to try this out as a fun and easy frozen treat to have on hand for my toddler.
So I hopped onto Instacart and added all of the ingredients to my basket to have delivered in just a few hours - I was easily able to make this frozen yogurt bark by early afternoon and have it ready to try after dinner the same day! After my ingredients showed up from Instacart, it only took me a few minutes to put together this recipe for frozen yogurt bark and throw it in the freezer! The first thing I did was mix up the yogurt with some maple syrup and vanilla extract. Then all I had to do was add parchment paper to a large baking sheet and pour the yogurt mix onto it. Final touches are to add your berries of choice and sprinkle on some granola. I also added some toasted coconut to a corner of my yogurt bark (my husband and son don’t really like coconut, so those pieces are just for me!)
Once the yogurt and berries were all laid out on the baking tray, I just had to pop it in the freezer for a few hours until it was completely frozen and set. After that, I took it out and carefully peeled away the parchment paper (bonus tip: I was able to save the parchment paper and reuse it when storing the pieces in a container in the freezer) and laid the slab of frozen yogurt bark onto a large cutting board. Using a big knife, I just cut the bark up into pieces and moved them back into a plastic container that was freezer-safe and layered the pieces between strips of parchment paper. Now it’s super easy to grab a piece out of the freezer whenever we need a quick snack!
Frozen Yogurt Bark
Yield: 24 Servings
Prep Time: 10 minutes
Ingredients
• 1/4 cup maple syrup
• 1/2 tsp vanilla extract
• 1 cup strawberries, sliced
• 1/2 cup blueberries
• 1/2 cup granola (optional)
Instructions
Prepare a large baking sheet with parchment paper. Pour the yogurt onto the parchment paper on the baking sheet.
Top the yogurt with the strawberries and blueberries. Then sprinkle the granola on top. (I also added some toasted coconut to one section of my yogurt bark. Use any of your favorite berries or granola toppings!
Place the tray of yogurt in the freezer and leave until it is completely set. Once the yogurt is frozen, you can remove and use a large knife to cut the frozen yogurt bark into squares. Serve immediately or store in a freezer-safe container.
NOTE: I added my squares of frozen yogurt bark to a plastic freezer-safe container and layered between sheets of parchment paper to avoid them sticking together in the freezer.
