The BEST Baked Oatmeal Recipe

We absolutely LOVE baked oatmeal in this house. After my second baby was born, a friend made us dinner and also offered to bring some baked oatmeal for breakfast the next day. When I tell you that this was the BEST baked oatmeal that I’ve ever had… 🤤
I asked for this recipe right away and now I make this baked oatmeal every time I deliver a meal to a friend who just had a baby. We also make it often for ourselves, especially on the weekends. My favorite add-ins are chocolate chips or blueberries, but we have also made it with peaches or just plain without anything in it.
After making this recipe several times, my husband and I have made a few modifications and made ours a bit less sweet and we usually double the recipe to make it in two 9x9 pans or into one 9x13 pan and a 9x9 pan. You could also stick to the original recipe here and make these as oatmeal muffins, which sounds amazing, I just haven’t made them like that yet.
Recently, I modified this recipe and threw in some pumpkin, pumpkin pie spice, and a large handful of chocolate chips for a breakfast at a women’s Bible Study at church - I was nervous about how it would turn out with the addition of the pumpkin, but it was incredible! So I thought it was time to share the base recipe with you all.
The BEST Baked Oatmeal
Yield: 9 Servings
Prep Time: 10 minutes
Cook Time: 40 minutes
Ingredients
• 1/4 cup canola oil
• 1/2 cup packed brown sugar
• 1/2 cup applesauce
• 1 1/2 cups milk
• 2 tsp. vanilla extract
• 1/2 tsp. salt
• 1 tbsp. ground cinnamon
• 3 cups old fashioned rolled oats
• 2 tsp. baking powder
Optional Add-ins:
• 1/2 cup chocolate chips
• 1/2 cup blueberries
• 1/2 can of pumpkin (whole can if a double recipe), replace cinnamon with pumpkin pie spice, 1/2 cup chocolate chips or chopped pecans
Instructions
In a large bowl, whisk the eggs, oil, and brown sugar until sugar is dissolved. Add the applesauce, milk, vanilla, salt, and cinnamon. Whisk until well combined. Stir in the oats and baking powder.
Pour the oatmeal mixture into a greased baking dish (9x9 pan).
Bake for 45 minutes or until a toothpick inserted into the center of the oatmeal comes out clean. Let the baked oatmeal cool slightly before eating. We love to serve this baked oatmeal with some milk poured over the top!
